People all over Europe have made gingerbread for centuries. In Germany, flat gingerbread cut into shapes is called lebkuchen. As far back as the Middle Ages, Germans would use lebkuchen to build Hexenhaeusle or "witches houses." As in the fairy tale Hansel and Gretel, these houses are built with sweets.
